Banana’s “N” Cream Cake

This is a very good cake that needs no icing. Moist, nice banana flavor, and easy to make!!

Banana’s “N” Cream Cake

1/3 cup shortening
1 ¼ cups sugar
2 eggs
1 teaspoon vanilla
1 ¼ cups mashed ripe bananas
2 cups all-purpose flour
1 ¼ teaspoons baking power
1 teaspoon baking soda
½ teaspoon salt
1 cup sour cream
¾ cup chopped walnuts (optional)

Preheat oven to 350 –

Mix
shortening and sugar, add eggs and mix well. Blend in vanilla and
banana’s. Combine dry ingredients; alternately add with sour cream;
stirring just until combined. At this time you can gently stir in
walnuts if you want them. Pour into a greased and floured bundt pan.
Bake for 50 min. or until cake test done. Cool 10 min. before taking out
of pan.

Use confectioner’s sugar to dust
the top of cake. The best way is to pour sugar into a small sieve and
push through with a small spoon.
